Pork Butt, or Boston Butt, is a rectangular cut of meat from the top end (butt) of the shoulder (front leg) of a pig. The roast is well marbled with intramuscular fat which makes it flavorful, but can be tough. Its high fat content, typically 25 percent, allows a long cooking process, like braising, roasting, slow cooker or smoking to render the meat tender. It is often made into ground pork or used to make BBQ pulled pork. Pork Butt Shoulder is a cut of meat that includes portions of the shoulder and the butt. Pork Butt is fattier than the adjacent Picnic Shoulder Roast or Pork Cushion Roast.
Roasted a whole Pork Butt, seasoned with salt, at 350 degrees fahrenheit for 20 to 25 minutes a pound or roast as low as 250 degrees for eight hours to obtain excellent results. Seasoning for pork butt can be as simple as just salt, or a mustard rub or as complex as a rub made from such ingredients as black pepper, brown sugar, garlic powder, ground mustard powder, onion powder, paprika, dried thyme and maybe a little cayenne. We like ground sage, but alas, it is not popular on roast pork. Cook Boston Butt until the internal temperature equals 145 degrees fahrenheit, that's 63 degrees Celsius. - AsNotedIn
