Bitterleaf Casserole

Ndole is a leafy, vegetable stew from the Sawa area of the Littoral Province in Cameroon. The dish consist of stewed peanuts, ndoleh, onions, spices and chilies anchored with beef, fish or shrimp. Ndole is traditionally served with boiled ripe plantains. Fresh ndoleh, a bitter, leafy, vegetable indigenous to West Africa, needs to be washed and rubbed together thoroughly before cooking. - AsNotedIn
